sorry I took so long to answer!! the pancake recipe is from my roommate Tori’s cookbook The Complete Vegan Kitchen by Jannequin Bennett. Here it is:

  • 2 cups all purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tbsp. applesauce (or mashed banana) — the applesauce doesn’t add any flavor but the banana does. They both act as an emulsifier in the place of eggs.
  • 1 tbsp. maple syrup
  • 1 cup non-dairy milk (soy, almond, rice, etc.)
  • 1/2 cup apple juice (you could just use water, too… that’s what I did because I didn’t have apple juice lol)
  • 2 tbsp. canola oil
  • non-stick spray or oil (this is for the pan)
  • I added berries.. you could add berries or choc. chips or nuts or whatever you want! : )
  1. Combine dry ingredients
  2. Mix in the wet ingredients
  3. Cook over medium-high heat until golden brown on both sides

That easy! : ) They’re really fluffy and delicious. I have to admit that they’re A LOT more difficult to cook when you add things into the batter (like berries) so in the future I will just cook them plain and eat anything else on the side… but that’s just me : ) Enjoy <3
