sorry I took so long to answer!! the pancake recipe is from my roommate Tori’s cookbook The Complete Vegan Kitchen by Jannequin Bennett. Here it is:
- 2 cups all purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 tbsp. applesauce (or mashed banana) — the applesauce doesn’t add any flavor but the banana does. They both act as an emulsifier in the place of eggs.
- 1 tbsp. maple syrup
- 1 cup non-dairy milk (soy, almond, rice, etc.)
- 1/2 cup apple juice (you could just use water, too… that’s what I did because I didn’t have apple juice lol)
- 2 tbsp. canola oil
- non-stick spray or oil (this is for the pan)
- I added berries.. you could add berries or choc. chips or nuts or whatever you want! : )
- Combine dry ingredients
- Mix in the wet ingredients
- Cook over medium-high heat until golden brown on both sides
That easy! : ) They’re really fluffy and delicious. I have to admit that they’re A LOT more difficult to cook when you add things into the batter (like berries) so in the future I will just cook them plain and eat anything else on the side… but that’s just me : ) Enjoy <3
